Braised Vegetables

1 TbspOlive oil
1Clove garlic, minced
½Onion, chopped in big pieces
2 TbspParsley chopped (or cilantro)
2Green onions, chopped
½ CupChopped vegetables of your choice (finely sliced carrots, celery, broccoli, cauliflower)
½ Tbspwater or vegetable broth
PinchSalt and pepper

On medium, heat olive oil in skillet. Add all vegetables except garlic, parsley, and green onions. Cook approx. 2 minutes. Do not brown or burn. Add garlic and cook for a further minute. Add 1-2 Tbsp water, depending on amount of vegetables. Cover and let cook for a further 3 minutes until vegetables are lightly steamed). Turn heat off, add the herbs and green onion.

Makes 2-3 servings.
