Kale Salad with Walnut Dressing

1 BunchKale
1Pear
1 cupPea shoots (you can also use dandelion greens, radicchio, spinach, arugula etc)
1 cupPecans or walnuts, toasted

Dressing

1/3 cupWalnut oil
2 tbspSeasoned rice vinegar or red wine vinegar
1/2 tspDijon mustard
1/2 tspMaple syrup (optional)
pinchSalt & pepper

Remove stems from kale. Finely chop the kale leaves and place in a large salad bowl. Cut the pear into small sticks and add to the salad bowl. Add the pea shoots and pecans. Mix the dressing ingredients together and add the quantity desired to the salad and toss.

Servings: 4-6
