This is one of my favourite recipies to make in the cold winter months. I hope it becomes your favourite as well.

Vegetarian Winter Stew

2 carrots
1 fennel bulb
1/2 small turnip
2 leeks
2-3 Tbsp olive oil
1 cup your choice of white kidney beans, black beans or chick peas (optional)
2-3 cups vegetable stock (ex: Harvest Sun herbal bouillon cubes)
1 cinnamon stick
2 tsp ground coriander
1/2 tsp ground ginger
2 bay leaves
salt & pepper

Cut all vegetables in bite size chunks. Fry gently in olive oil for about 10 minutes.

Stir in the stock, spices, salt & pepper. Bring to a boil, stirring. Cover and simmer until vegetables are tender.

Remove cinnamon stick and bay leaves before serving.
